Ingredients

1 (12 oz) jar marinated artichoke hearts,

2 cloves garlic, minced (optional)

drained and chopped (reserve marinade)

1 dash hot pepper sauce (such as Tabasco(R)) 1 bunch green onions, chopped

salt and ground black pepper to taste

9 eggs, beaten

1 lb sharp Cheddar cheese, grated

14 saltine crackers, crumbled

1/2 C. chopped fresh parsley

Directions

1. Before you do anything preheat the oven to 325 F. Coat a casserole dish with a cooking spray.

2. Place a large pan over medium heat. Pour in it 3 tbsp of the artichoke marinade and heat it. Add the green onion and cook it for 4 min.

3. Get a large mixing bowl: Stir in it the cooked green onions, eggs, Cheddar cheese, saltine crackers, parsley, garlic, hot pepper sauce, salt, and black pepper.

4. Pour the mix into the greased casserole. Place it in the oven and cook it for 42 min. Serve your Frittata warm with your favorite toppings.

5. Enjoy.
